M&M Cookie Bars

M&M Cookie Bars
These are awesome. I also add Heath Bar crumbles and Reese’s Pieces to it. I made these once in a smaller dish and they were giant, but took an hour and a half to cook — so use the recommended dish. Parchment paper makes them super easy to get out and cut.

Ingredients

  • 1 cup unsalted butter, room temperature
  • 1 cup light brown sugar, packed
  • ¾ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¾ teaspoon salt (or 1 teaspoon kosher salt)
  • 1 cup chocolate chips, plus more for the top
  • 1 cup M&M’s, plus more for the top
  • Heath Bar crumbles (optional)
  • Reese’s Pieces (optional)

Directions

  1. Heat the oven to 325°F. Cream the butter and both sugars for about a minute.
  2. Add the eggs and vanilla and mix until combined.
  3. Add the flour, baking soda and salt, and stir until just combined.
  4. Fold in the chocolate chips and M&M’s, holding back about ¼ cup for the top.
  5. Line a 9x13 pan with parchment and spray it.
  6. Scoop the dough into the pan and press it out evenly.
  7. Scatter the reserved M&M’s and chocolate chips over the top.
  8. Bake 30 to 35 minutes, until the top is barely golden.
  9. Let them cool completely before lifting them out and slicing.

Notes

  • Use the 9x13. A smaller dish makes them enormous and pushes the bake time out to about an hour and a half.
  • Parchment paper is what makes them easy to lift out and cut cleanly.
  • A 15x10 pan gives thinner bars and only needs about 20 minutes.
