Hot Honey Chicken Meatball Bowls

Erin made these and I could swear we were at a restaurant. It’s a time-consuming recipe, but the payoff is worth it.
Ingredients
Meatballs
- 1 lb ground chicken
- 1 egg
- ½ cup almond flour or breadcrumbs
- 2 cloves garlic, minced
- 1 green onion, chopped, plus more to garnish
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 1 tablespoon olive or avocado oil, for cooking
Hot Honey Sauce
- ⅓ cup sriracha or hot sauce (¼ cup for less heat)
- ⅓ cup honey
- 2 tablespoons reduced sodium soy sauce
- 2 cloves garlic, minced
- 1 tablespoon white wine vinegar
To Build the Bowls
- Steamed rice, or another grain
- Roasted broccoli, or another vegetable
Directions
- Whisk the sauce ingredients together in a small bowl until smooth and set aside.
- Combine everything for the meatballs except the cooking oil, then roll into golf-ball-sized meatballs, keeping them from touching on the plate or sheet.
- Heat the oil in a large skillet over medium. Cook the meatballs 3 to 4 minutes per side until cooked through, dropping the heat if they’re browning too fast.
- Pour the sauce into the pan and simmer about 2 minutes, until it thickens.
- Serve the meatballs over rice with the roasted broccoli alongside. Garnish with green onion and spoon over any extra sauce.
