Friday Cookies

This is from our church cookbook, back when we were first married. They’re so good, and you can put whatever junk in them you want — candies, nuts, dried cranberries, whatever. Really good, and an easy throw together. I made them with candy cane crumbles one year for Christmas and they turned out great.
Ingredients
- 1 cup butter-flavored Crisco
- 1 cup brown sugar
- 1 cup white sugar
- 2 eggs
- 1 tsp vanilla
- 1½ cups flour
- 1 tsp baking soda
- 1 tsp salt
- 2 cups Rice Krispies cereal
- 2 cups oatmeal
- 1 (12 oz) pkg chocolate chips
- ½ cup chopped pecans
Directions
- Cream the Crisco with both sugars until light and fluffy.
- Add the eggs and vanilla and beat.
- Sift the flour, baking soda and salt together, then add to the creamed mixture.
- Fold in the Rice Krispies, oatmeal, chocolate chips and pecans.
- Drop by the tablespoonful onto an ungreased cookie sheet.
- Bake 10 minutes at 350°.
Notes
- Swap the mix-ins for whatever you like — candies, nuts, dried cranberries. Candy cane crumbles at Christmas worked well.
- Pam’s note in the cookbook explains the name: Friday was her day off, her kids loved these, so Fridays became cookie day.
