Erin and I went to Mercier Orchards in Blue Ridge to pick blueberries and blackberries and, after eating all we could while walking around, we came back with a ton of blueberries. So I made them into a cobbler. Pretty sure it tasted so good because we picked the berries ourselves.
Ingredients
Filling
- 4 cups blueberries, fresh or frozen
- ½ cup granulated sugar
- 1 teaspoon lemon zest
- 6 tablespoons butter
Batter
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- ¼ teaspoon salt
- ¾ cup milk
- Ground cinnamon, for the top
Directions
- Heat the oven to 350°F. Slice the butter into a 9x13 baking dish and put the dish in the oven while it preheats, so the butter melts. Take it out once it has.
- Toss the blueberries with the ½ cup of sugar and the lemon zest in a bowl.
- In another bowl, mix the flour, the 1 cup of sugar, the baking powder and salt. Stir in the milk until just combined.
- Pour the blueberries over the melted butter in the pan.
- Drizzle the batter over the blueberries.
- Sprinkle cinnamon over the top.
- Bake 35 to 40 minutes, until lightly golden.
